WINE CLARIFICATION
In the wine processing industry, cloudiness that creates an adverse
consumer reaction must be removed. Cloudiness and its removal
has been an important issue in this industry for centuries. Wine
grade VOLCLAY BENTONITE, a low cost mineral colloid can
be effectively used as a solution to this problem.
Although primary filtration takes care of large particles, macromolecular
solids, which create colloidal suspension, pass readily through
filter cloths and remain in the final product.
In the case of wine clarification, undesirable suspended (positively
charged) proteins will cause cloudiness. They are true colloids
and obey colloidal laws, therefore one excellent approach is to
attack them with equally strong colloids of a different type.
VOLCLAY WG POWDER or GRANULAR bentonite is a true
colloid, negatively charged which, when completely dispersed in
water is added to the cloudy wine. Dispersed particles of Volclay
have a uniform negative surface charge, thus attract and hold
the positively charged protein colloids in suspension. The two
colloids neutralise each other and form a precipitate, which settles
to be filtered without difficulty.
